Do these things seem like deal breakers to you?

You're definitely having your doubts, which is alright, it's better to have them now than later. If you really like her maybe you can just stick it out for a little longer (at least a month?) I know I had some of those problems like what you say is her seeming somewhat weak, but in my case I did that to show him that I would be gentle and kind to him out of his harsh life and abusive father. She might just have some underlying reasons for behaving that way, but then again, she went to Catholic school... But like I said, just hold in there and give her a little more time. If she does these things that bug you on more of an extreme level, ask her why she's doing it or tease her a little over it so she knows kinda what you're thinking about it.
