Turkey what to do with the raw left over parts?

I buy a whole turkey,Remove the and brine and cook it.So I have a lot of left overs,I boiled them once and had to feed it to the dogs(strong,gross) I would like to make a mild turkey stock(if that is possible) some gravy anything that can be cooked and frozen.
